Copelia Panelitas are a hard candy, obtained by concentrating a mixture of milk, flour, sugar and panela by evaporation, in the presence of a neutralizer such as bicarbonate. These candies have a solid, glassy consistency and a high concentration of solids, which when cooled acquire a solid and brittle consistency. PDLs have a light brown or brown color of medium intensity. Their surface has little shine. They are moderately hard, dry and sandy. They have a notable sweet flavor of moderate intensity, with a milky aroma.
